Between home school and outdoor chores, our mornings are busy! My favorite breakfasts are ones I can pour into a pan and pop in the oven. Lately, my kids have been asking for these sourdough sheet pan pancakes.
The beauty of sheet pan pancakes is that I can put them in the oven to bake, go outside to do the chores, and then come back inside with a hot breakfast ready. Then I simply slice them up and serve them to hungry kids. A couple of my kids like maple syrup, I like just butter, and we all enjoy fruit syrup. You can easily make a fruit syrup with frozen fruit:
- pour the frozen fruit in a sauce pan over low-medium heat and cover with a lid
- once the fruit has thawed, add a drizzle of agave or honey
- mash the fruit and let simmer, covered, for ten minutes
- uncover and serve hot, or let excess liquid simmer off for a thicker syrup

You can ferment these pancakes overnight by making the batter in the evening and keeping them in the fridge overnight to ferment. In this case, wait until the morning to add the melted butter. This will keep the batter from being too stiff to pour.

sourdough sheet pan pancakes
Ingredients
- 3 cups flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 cup sourdough starter
- 4 eggs
- 1/3 cup maple syrup
- 2 cups plain yogurt
- 1 tsp vanilla
- 6 tbsp butter, melted and slightly cooled *
Instructions
- Preheat the oven to 425 degrees (unless preparing for the next morning)
- line a standard size sheet pan with parchment paper, or grease well with butter
- in a large bowl, stir together the flour, baking powder, and salt; stir in the sourdough starter
- in a separate bowl, beat eggs, maple syrup, yogurt, and vanilla together with a fork until well combined
- add the wet ingredients to the dry, stir until just combined, then add the melted butter*
- stir so that no traces of dry flour are left (at this point you can cover and let it ferment in the fridge overnight or bake right away)
- Pour the batter onto the prepared sheet pan and bake for 15-18 minutes
*if you are making up the batter the night before baking the pancakes, add the melted butter in the morning before step 7
